Irresistibly Cheesy Garlic Rolls (Soft, Buttery & Addictive)
There’s something unbeatable about warm bread, melted cheese, and garlic butter coming together. These cheesy garlic rolls are soft on the inside, golden on the outside, and honestly dangerous because you’ll keep reaching for “just one more”.
I made these on a whim and they instantly became a repeat recipe. Perfect as a side for pasta, soups, game nights, or even as a snack on their own. And the best part? They’re surprisingly simple to make at home.

Ingredients
For the dough:
3 cups all-purpose flour
1 cup warm water
2 tsp active dry yeast
1 tsp sugar
1 tsp salt
2 tbsp olive oil
For the roasted garlic filling:
1 whole garlic bulb
Olive oil (for roasting)
1½ cups shredded mozzarella (or mixed cheese)
2 tbsp melted butter
Optional: parsley or mixed herbs
How To Make Them
1. Roast the garlic (the flavour booster)
Cut the top off the garlic bulb to expose the cloves. Drizzle generously with olive oil and wrap in foil.
Roast at 180°C (350°F) for about 35–40 minutes until soft and golden.
Once cooled slightly, squeeze the cloves out — they should come out like a smooth paste.
Set aside.
2. Make the dough
Mix warm water, yeast and sugar in a bowl. Let sit for 5–10 minutes until foamy.
Add flour, salt and olive oil. Mix and knead until smooth and elastic.
Cover and let rise for 1 hour or until doubled in size.
3. Fill the rolls
Punch down the dough and divide into 12 pieces.
Flatten each piece slightly. Spread a little roasted garlic paste in the center, add cheese, then seal and roll into a ball.
Place on a greased baking tray.
4. Bake
Brush tops with melted butter.
Bake at 190°C (375°F) for 20–25 minutes until golden brown and fluffy.
5. Final touch
When they come out, brush with more butter (always), sprinkle herbs if using, and let them cool for just a minute before serving.
